Wine With Bok - 9.5/10 stars
This is the first time I use a decanter that’s catered for white wine. The beauty is that, it’s flat enough for me to fit the bottle in the fridge to decant my white. It’s also able to place the decanter vertically in a shallow ice bucket to chill and decant. I decanted this Chevalier Montrachet for 3 hours in the fridge, it really did some great magic to my Grand Cru. The initial first sip was completely shut, with a lack of vibrancy, and a tinge of orange zest from the bouquet as well as the content. For 2009 vintage, it’s a hot vintage, and I worry a lot as normally it will be premox or turned extremely ripe easily (and the dreaded sugar cane taste will surface). But I was lucky enough, it turned out to be a pristine condition bottle. It has so much energy going on, for sure it deserved big attention. The unique oily texture is very much exclusive to Grand Cru white burgundies only, and normally only found in Chevalier Montrachet and Montrachet only. Bear in mind La Cabotte is a really special plot lying just above the Puligny side of Montrachet. The extremely small production really deserves special attention for white burgundy lovers. Bouchard has been separately vinifying this parcel, which at one time was part of Montrachet, since 1992 though the first commercial release was not until 1997; Prost jokingly refers to this parcel as "Montrachet du haute pente", or upper slope Montrachet** This is slightly riper than the straight Chevalier with a similar nose but with more yellow fruit and spice influence that is followed by rich, serious, broad-shouldered and intensely stony flavors that possess a positively gorgeous sense of underlying tension that adds energy to the massive, explosive, long and palate staining finish. This is a big yet impeccably well-balanced wine that should age for years. (2/2011)

Bright pale yellow. Steely aromas of apple, minerals and warm stone. Voluminous and powerful, with fat flavors of pear, menthol, crushed stone and iodine. Most impressive today on the very long, broad aftertaste, which saturates the palate with lemon and crushed stone. This boasts the sheer size and scale of a Montrachet. (2/2019)
