Les Sorbets was much more sophisticated, with aging in 30% new oak barrels and 70% single-wine barrels. A whiff and it’s already revealing a hint of buttery toast and slightly leathery. The content was much more chunky and structured, initially a bit rough, but it turned softer and much more elegant thereafter with some food. Les Sorbets is very suitable for long term aging and goes with heavier food like roast rack of lamb.(8/2021)
