Surprisingly very yeasty and aged nose, almost like a Dom Perignon produced in the 80s. However, the palette was nothing like what the nose has displayed, in fact, the body was so fresh and creamy I thought it was much younger than the 21 years age was displaying on the label. Initially I get quite a bitter lemon zest on the palette, the precision on the body was quite good, with great acidity. However, one has to evaluate the champagne when it warmed up, that’s where the true color really showed. Dom Perignon 98 was surprisingly fruity when warmed up, totally different from when it was chilled, I quite enjoyed the fruits so I decided to take it off the ice bucket and let it warmed up naturally in the bottle. Obviously I totally enjoyed the remaining bottle!

Nutty and toasty, this is already maturing. It has a ripe, soft texture, deliciously balanced between acidity, grapefruit and riper peach flavors. It feels sumptuous, rich and certainly ready to drink. (12/2010)

The 2000 Dom Perignon is a gorgeous, seductive wine that floats on the palate with remarkable grace. Toasty aromas meld into freshly cut flowers, apricots and pears, with sweet notes of mint and licorice that linger on the long finish. This perfumed, inviting Dom Perignon is elegance personified, and in this vintage the wine fully merits its lofty reputation. (3/2009)

The 2000 Dom Pérignon is a gorgeous wine to drink now, as it is already showing quite a bit of aromatic and flavor complexity. Although the 2000 doesn’t have the multi-dimensional personality or structure of the very best DPs, it does offer tremendous drinking pleasure today. Hints of pastry, baked apple and mint add nuance, with a touch of reduction that lends an added kick of freshness. Ultimately, the 2000 is a very drinkable and delicious Dom Pérignon. (7/2019)
