The scent of blackberry, cassis, vanilla and licorice emanates from the glass. This profound and complex wine is full on the palate, offering flavors of wild red and black berries, milk chocolate, licorice, clove and hints of leather and dried Mediterranean herbs wrapped up in a layer of powerful tannins that slowly peel away to reveal a closing note of fennel bulb. The grapes were hand-harvested in 15 kg boxes early in the morning to preserve freshness, then meticulously sorted to select the finest berries. Fermentation occurred naturally with native yeasts in conical tanks, followed by a 25-day maceration for enhanced aroma and color complexity. Malolactic fermentation took place in new, lightly toasted American oak barrels. The wine was aged for 18–24 months—85% in new American oak (dried for 4 years) and 15% in fine-grained French oak—with careful racking every six months to preserve fruit character.
