1961 Climens Sauternes Barsac 1er Cru
Climens is known to be not as sweet as their counter part Sauternes, I liked Climens for this less sugar. A 61 Climend possessed the same character, less sweet, and on top of that it has those very matured honeycomb character that no way a young sweet dessert can replicate, and that's the beauty of such old sweet Barsac wines. The experience is totally unforgettable, we paired it with very ripe roasted peach with full cream and sliced almonds, it's heaven.
