Fabien Dauvissat, The Prince of Chablis, though not as instantly recognized as his cousins—René of René et Vincent Dauvissat or François Raveneau by marriage—Fabien Dauvissat has quietly carved out a name for himself in Chablis. Since taking over the family domaine from his father Jean Dauvissat, Fabien has steered the estate with conviction and vision, rapidly earning respect among Burgundy insiders. In 2014, Fabien made the pivotal decision to convert the entire domaine to organic and biodynamic viticulture. His motivation was deeply personal: to safeguard the health of his vineyard team and family. Rejecting the use of harmful chemicals, he chose to work only with copper and sulfur. This shift, while demanding and yield-reducing, has elevated the quality of his wines—delivering finesse, purity, and a striking expression of Chablis terroir. Jean Dauvissat had focused primarily on viticulture, cultivating nearly 53 acres across 53 distinct parcels—from Petit Chablis to Premier Cru across seven communes. Most of the harvest was sold to a major négociant. Fabien, however, represented a new generation—one that values excellence over adequacy. Determined to take the domaine to new heights, he transitioned from grower to independent winemaker, setting a bold course toward producing exceptional estate-bottled wines.
