1978 Dom Perignon
OLD DOM PERIGNON
This was the oldest Dom Perignon I've ever had, and I can share with you that old DP was a league by itself. The last 78 champagne Taittinger Varseley I had was not even close.
Bouquet of very aged yeasts, some dry tobaccos, but surprisingly fresh.
Bubbles failed to exist anymore, but a sip and I could feel the great intensity of the champagne, the flavor was shocking, the kind of broad, rich wine was so expansive, accompanied by extremely long finishing, was really impressive.
