1985 Chateau Margaux Pavillon Blanc
The tasting characteristics of young Pavillon Blanc finesse, complexity, richness, length, are surprising, even astonishing for a wine made only from Sauvignon white. After one or two years, the wine goes through a slightly dull phase, which can last several years. It seems to be looking for its identity. However, seven or eight years after its bottling, all of a sudden, it reappears, still dazzling but more subtle, mellow and delicate.
Absolutely the best Bordeaux white I have ever drank (dying to try Haut Brion Blanc which I have not had). This awesome white was so consistent during my 3 hrs lunch, there was no sign of fading at all. Started off with lemon, lemon zest, and tannins all dissolved and balanced acidity, turned slightly pineapple when we had 30g of caviar, and morph itself into an aged white burgundy later with floral and oily character. It was so amazing that it will need a white burgundy Grand Cru to match this quality.
