CELEBRATION
In the office of Master of Wine, I was offered a glass of champagne (he called it shampoo). Obviously it was served blind. A whiff and I find it yeasty. However the yeasty nose went off quite fast in the glass. On the palate, the high acidity hit me, followed by creamy mousse, and sharp and precise taste followed suit. A magnum was served. To test my guesses, I purposely left the content in the glass for 30 mins. Turned rich, ripe & deep. I guessed the label and vintage correctly. Yay!

DOM PERIGNON 1990 ROCKS!
I had so many bottles of this DP 90 in the past, they were impressive but not like this bottle at all. Served in a white wine glass, nose shows yeasty and slightly aged characters. The palette, oh mine, was where it shines; intense, tertiary flavor, good depth, good bubble & good acidity and balance of fruits with some slightly aged body. This bottle is in the RIGHT DRINKING WINDOW. Those who prefers sharper and more acidity like younger 96 may find it not precise enough, not me.
