Read my past two posts to understand where I’m leading to. JM Boillot, a grandson of Etienne Sauzet, learned everything about winemaking from a legendary Sauzet, one thing he didn’t learn to make premox wines!
I had many bottles of JM Boillot wines, not once I encountered a premox bottle. This had a very unique bouquet of sorghum, Chinese liquor, plus a tinge of orange. Content was with exceptional balance, some elevated amount of orange, and very easy to drink, perhaps due to matured age.
