1997 Salon Le Mesnil Blanc de Blancs Brut
STRUGGLING
I was served blind and chilled on this glass, a bit disappointed with the content as there was nothing really special about it on first sip. In fact it was quite flat and even slightly bitter. But mind you, a Salon needed time, and the first sip should not be a full evaluation. It really paled next to the Cristal 2006 served. However, the tide changed after about an hr, the stony Salon finally woke up and started to take attention. Still far from recovery but at least it wasn’t as bad as start.

HONEY HONEY
I was served a glass blind after drinking 4 bottles of red wines, palate was already a bit fatigue, not to mention tasting a champagne after reds was probably like drinking tea after a strong dose of espresso. Even though I smelled and correctly identified it as champagne, I was guessing at best Dom Perignon, Moet and Chandon, or perhaps a Pol Roger NV; simply because the palate was full of honey, just 1 teaspoon in a full glass of water type, slightly diluted. Don't take my notes too serious.

TOP CHAMPAGNE...
But didn't meet my expectations. Not sure if the bottle was not very well kept, or it has not fully developed compared to the last bottle I had. Even though I liked it, simply the fact that unlike other champagnes normally smells and tastes yeasty, Salon does not have that character, showing itself as a well made wine. This bottle was rather dry, sharp and acidic, not fruity enough to my liking. Nevertheless it's still a good champagne.

Pale yellow color, toasty citrus nose. Lean and pure in the mouth, sharp with high acidity. Wound up and tight. Good btl with nice btl age. A bit vanilla, fruits still crisp. Nicely kept.
