1998 Dom Perignon
Surprisingly very yeasty and aged nose, almost like a Dom Perignon produced in the 80s. However, the palette was nothing like what the nose has displayed, in fact, the body was so fresh and creamy I thought it was much younger than the 21 years age was displaying on the label. Initially I get quite a bitter lemon zest on the palette, the precision on the body was quite good, with great acidity. However, one has to evaluate the champagne when it warmed up, that’s where the true color really showed. Dom Perignon 98 was surprisingly fruity when warmed up, totally different from when it was chilled, I quite enjoyed the fruits so I decided to take it off the ice bucket and let it warmed up naturally in the bottle. Obviously I totally enjoyed the remaining bottle!
