2004 Diebolt Vallois Fleur de Passion Brut
TRANSFORMER
I had a sip, wrote all my notes of the nose and then try to re evaluate it again, but to my shock, my notes were all outdated in no time, coz the champagne morphed into a different character: ripe, wood varnishing, over ripe fruits, slightly creamy and yeasty.
Not a common champagne, with such character of ripe fruit, forward, extremely rich, bold, slightly charred and burned. Nice pairing with some Spanish seafood.
