You can see from the photo we matched this wine with Szechuan spicy catfish dish, quite challenging but still decent outcome.
Nose of medicinal and water chestnuts. The texture of the wine is waxy and oily, my initial guess was a Viognier based wine. I'm not too far off though.
The wax character was getting along with the dried chilli quite well, the wax sat on the palate to prevent the spice from spreading further, although it doesn't extinguish the fire. Nice dish and pairing.
