2005 William Fevre Chablis Grand Cru Les Clos
REVIEW AGAIN
I had this bottle about half a year ago, and was thirsty last night that I pulled out this bottle to pair it with scallops and prawns. Amazingly it has improved significantly compared to the last bottle, was it the food or company? Not sure.
Was heavily soapy (yes, soap detergent!) on the nose when chilled, slowly morphed into lemon and cooked fruits when warmed up.
Surprisingly rich, very good complexity, very layered, floral and good depth. Les Clos is a fantastic Chablis plot!

SECOND OPINION
I drank another bottle of this label today, just to re visit and checked on my previous evaluation. 4 stars is just about right on my 2nd visit.
Buttery and lemon started off on the nose, slowly morphed into pear eventually.
Certainly don't have the skinny salty and thin character of most Chablis, instead it was rather fat. Lots of fruits upon entry, pear and mild honey were the primary character. However, the finish was just disappointingly short and abrupt. Not truly a Grand Cru wine.
