2007 Kuaijishan Shaoxing Wine
YELLOW WINE
This is a common wine in Anhui, China. We drink it by heating it up with hot water bath, thus the wine is warm rather than boiling hot (unlike sake). It's purpose is to warm up the body during winter time, and to pair it with Chinese food. It's aged for 10 years. A low 14% abv, thus it's like drinking wine. Palate has high acidity, sharp and focused, texture is light, easygoing and pleasant, a much better choice than those baijiu that's at least 42% abv, this one goes well with Chinese food.
