2007 Vincent Dauvissat Chablis 1er Cru Vaillons

Vaillons is one of the largest 1er Cru plot for Chablis, and normally you can trust Vincent Dauvissat to do a good job.
A diminished floral hit the nose, and replaced with lemon in no time, and slowly morphed into cooked lemon thereafter. A sip and I felt uneasy as it was filled with lemon peels, very atypical of Dauvissat style. Palate was lean as well, somehow lacked enthusiasm with the fruits, although it slowly crawled back to life thereafter. Paired well with oyster and Alaskan King Crab.
