2011 Paul Pillot Chassagne Montrachet 1er Cru Les Caillerets
I always express respect for Paul Pillot’s wine, and this is a litmus test whether Paul is a good winemaker as Les Caillerets is definitely a respected plot and one of the best 1er cru in Chassagne Montrachet. We have a crowded field with Jean Marc Pillot, Ramonet, Marc Colin … etc as a contender as the best producer of Les Cailleret wines. However, I think Paul Pillot’s production was a league above the rest; firstly the bouquet was stunning with expressive fruits, ocean freshness with a blend of swimming pool chlorine. Next, the content was stunning too, the liveliness of acidity was way above most winemakers style, not only when it was chilled, even when it warmed up in the glass, I could still taste the fresh acidity. Lastly and most importantly, Les Caillerets produced by Paul Pillot has got the finesse and ultra elegance that I could not acquire similar style from other winemakers. Thus, I believe Paul Pillot should be the definitive Les Caillerets’ appellation best representative.
