2012 Kouzijiao
SOFTNESS
At 40.8% abv, it's not for the faint hearted, although it's not the strongest baijiu from China (which can go up to as high as 60% abv, although 52% abv is common). Aged for 5 years, the low alcohol probably also created the softness and smoothness of the alcohol as usually baijiu is very choking. This was quite exceptional, I enjoyed it over rack of spicy lamb and vegetables.
