2016 Paul Pillot Bourgogne Blanc
Paul sourced these grapes around burgundy region, and I was told roughly 40% was from Chassagne Montrachet and 60% from Remigny, and they’re fermented and aged in 350L new barrels for 12 months and another 6 months in tank. It’s a simple drink, I must confess Paul Pillot is good at making wines with good acidity. However, this most basic entry level organic wine lacked fruits. If you just want something to go along with your food without putting too much thought over it, this wine will fit the bill perfectly.
