2017 Paul Pillot St Aubin 1er Cru Les Charmois
Paul Pillot didn’t produce this wine like his top plots using his magic wand, I was quite surprised. As such, the terrior still dominates the style of the wine despite superb winemaking skills by Paul Pillot. The style of this wine was much closer to Chassagne Montrachet, and in fact very typical. The closest resemblance I can think of was Les Caillerets. Content was with decent acidity when chilled, but it quickly faded off when the wine warmed up in the glass, replaced with very matured and forward fruits, while the acidity moved to the background and gracefully disappeared.
