2020 Jean Dauvissat Chablis Heritage
I was expecting a bit more for their Heritage as it’s produced from very old vines (Vielles Vignes), planted about 60 to 70 years ago, plus a malolactic fermentation with a long maturation on fine lies, thus the quality is assured. The wine is very aromatic and complex, the most obvious is probably the minerality which is almost stainless steel nose, followed by big fruits and some floral notes. A sip and the obvious powerful fruits dominated the whole palate (this has to be the magic from the old vines), while the subdued acidity lingered around in the background, adding weight to the wine. According to the winemaker, he recommends that this wine should be aged for a couple of years and it’ll only get better, and it’ll show a big aromatic complexity. Patience is required.
