Juyondai Ushuhomare Limited Edition Junmai Daiginjo

Coming from Yamagata-ken, Japan, this sake is classified as Junmai Daiginjio which is at the top level of the sake-chain of classification. Made of a hybrid of Miyamanishiki rice, served from a 1.8L bottle, its alcoholic content is 16%. I brought this bottle to a Kobe beef restaurant in town, to pair it with various Kobe beef cut. The sake was slightly warm when I arrive for lunch, due to the hot Singapore weather. The first glass was rather disappointing, as it obviously is overly sweet and powerful with rough edges. I’m very sure I served at the wrong temperature, thus without hesitation I chucked the whole bottle into an ice bucket to chill it off for at least 20 mins. With the right temperature, the sake is much more enjoyable with luxurious taste along with elegance and drinking beautifully with various beef chunks. Bottom line, Juyondai really needs to be served chilled, or it’ll be too sweet to anyone’s liking.
