A sparkling from Catalan, Spain, made with grape varieties of 40% Xarel.lo, 30% Parellada and 30% Macabeo. The sparkling wine has gone through two fermentations and aged in the bottle for 24 months. Bouquet of slight yeast and biscuit, with a hint of fresh ripe apple. Content is of very friendly approach and easy drinking, with a slight hint of green apples, fresh acidity and fruity. I tried to pair it with oysters, but found that oyster taste overwhelmed the sparkling wine, as such, it seemed to lack some kind of punch and penetration on the palate unlike French champagne. Suggest pairing it with very light flavored food.
