Selosse only produced 3000 bottles a year, and he refused to call it champagne. Everyone who tasted it said it was very aged. How aged exactly? Perhaps as old as a Dom Perignon 85, IMO. The winemaker used something called Solaris System , whereby the top wine was exposed to the sun, and then the top gets rotated to the bottom of the barrel, thus creating an aged champagne. He intentionally reduced the bubble to make it seemed more aged too. I still prefer natural aging over artificial one
