Dominique Laurent, a former pâtissier turned micro-négociant and master blender, is famed for sourcing old-vine fruit and vinifying with minimal intervention. His Vieilles Vignes bottling of Clos Saint Jacques comes from exceptionally old vines—some over 70 years old—adding an extra dimension of intensity and structure.
