Established in 1900 by Jean-Baptiste Pillot, a skilled barrel maker turned vintner, Domaine Paul Pillot transitioned from crafting barrels to concentrating solely on cultivating vines. Following World War I, his sons Alphonse and Henri assumed leadership, expanding the estate and initiating the domaine's venture into bottling their own wines. In 1968, Henri's son Paul took the helm, significantly augmenting the domaine's prestige by acquiring coveted vineyards such as Chassagne-Montrachet 1er Cru parcels like Clos Saint Jean, Les Grandes Ruchottes, Les Caillerets, La Grande Montagne, and the Saint-Aubin 1er Cru of Les Charmois. Presently, the domaine boasts 13 hectares of vines, with 4.5 dedicated to red varietals. Managed by Paul's dynamic son Thierry, who joined the estate in 1999 and assumed full-time responsibility in 2004, he represents the fourth generation steering this illustrious property. Under Thierry's leadership, the primary emphasis has shifted to the vineyards, characterized by a subtle use of new wood and a non-interventionist approach in the cellar. The outcome is wines characterized by finesse and a palate-enveloping purity that authentically mirrors the exquisite terroirs of Chassagne-Montrachet.
