Composed of 60% Grenache Noir, 30% Syrah, and 8% Mourvèdre, with the remaining 2% comprising Cinsault, Counoise, Muscardin, and Vaccarèse, this wine begins with hand-harvested grapes that are fully destemmed prior to fermentation. The fermentation process spans 15 to 20 days, with careful cap management through plunging as needed for optimal extraction.
After completing malolactic fermentation, a meticulous selection process takes place—any batches not meeting the Estate’s stringent quality standards are sold off in bulk. The chosen wines are then aged for 12 months, split evenly between barrels and stainless steel tanks. A second selection occurs at the end of this period, with any underperforming batches once again diverted to bulk.
The final blend is assembled in tank and undergoes an additional 6 months of maturation before bottling. Following bottling, the wine rests for a further 4 to 6 months to ensure optimal integration before being released for shipping.
