The 2023 Aegerter Savigny-lès-Beaune comes from a historic village nestled between the slopes of Beaune and the Corton hill, an appellation spanning nearly 375 hectares—142 of them Premier Cru—and named from the Latin Silv-in-iacus, “land of the woods,” a nod to the surrounding forests. Grown on limestone- and sand-based soils, this 100% Pinot Noir is hand-harvested, destemmed, and cold-macerated before vat fermentation, then aged 8–10 months in oak barrels, half of which are new. Brilliant ruby in colour, it offers a bright nose of small red fruits and delivers a fresh, lively palate supported by a subtly rich finish and a fine touch of oak. It pairs beautifully with oeufs en meurette or grilled black pork from Bigorre.
