Wine With Bok - 9/10 Stars
d’Ambonnay is a very well-known Grand Cru village in champagne, there are many well-known champagne houses from d’Ambonnay, e.g. Krug, Duval Leroy, Mumm, Piper Heidsieck, Pol Roger, Roederer … etc. Saint-Reol is a cooperative by polling 58 champagne producers with excellent champagne making skills to make their champagnes, thus quality is assured. I’m not a sweet tooth person, and I don’t really appreciate sweet wines, not to mention champagne that’s sweet. Since I’m having oriental spicy food tonight, I might as well give it a shot and see how it goes with my food pairing. A blend of Pinot Noir and Chardonnay, at 45 grams of residual sugar per litre, the sweetness was pronounced. I was having a mala (a spicy and numb peppercorn from Sichuan, China) fish dish, and I loved spicy food. Surprisingly, a sip of the demi-sec took all the fiery numbness and spiciness away! This demi-sec was like a sorbet, a palate cleanser, simply a perfect match for this mala dish, performed much better than those Sauternes which was overpowering sweetness.
