1981 Cheval Blanc Saint Emilion
DOG BITE
I had this Cheval Blanc Saint Emilion 81 a couple of years ago, and was served double blind again, and was very much impressed with it. This was the vintage whereby Parker rated it poorly and was bitten by the chateau dog and the owner threw him Parker's newspaper review to wipe off his blood. LOL! Slight fragrance, heavy vanilla and slight barnyard dominated the nose. Palate was with very jam packed fruits, although slightly green notes surfaced, mellow and pleasant. I guessed the label correctly but not 81!

The deep ruby/purple color reveals an extraordinary projected, surreal bouquet of menthol, red, blue, and black fruits, and hints of mocha, licorice, and sweet oak. This opulent, tremendously concentrated Cheval Blanc Saint Emilion possesses undeniable finesse, elegance, and freshness as well as a vibrant, nuanced, delineated personality. Surprisingly good from an average vintage.
