In the 3rd flight of 18 producers of Les Referts, this unknown producer came in the winner of the flight for me, as the balance of the content was simply the best amongst the 14 bottles I’ve tasted so far.
I’m starting to ponder whether this will happen again if I do the same tasting 5 yrs down the road? I have my doubts. Acidity in the wine is important, but they don’t go away, whereas fruits may go north or south, shaking off the balance. Thus, I have to project based on fruits.
