2016 Paul Pillot Chassagne Montrachet 1er Cru Les Caillerets
After the disappointing tasting of the 2014 (see report Paul Pillot Chassagne Montrachet 1er Cru Les Caillerets 2014, , 30 Sep 20), I almost wrote off Paul Pillot for Les Caillerets, but I have several bottles of this wine in my cellar, so I have to taste it no matter what. For sure, perhaps all my past notes were totally wrong, or perhaps Paul has finally realized he has made mistakes in making Les Caillerets wines. The 2016 was a drastic change compared to all past vintages, and this vintage he got it right and expressed the utmost of Les Caillerets wines. Bouquet of mild ocean freshness and a hint of lemon zest. Content was where it shine; the utmost balance of fruits and acidity, and the tamed down loudness of the wine, gave me a feeling of tranquility as if tonight is Thanksgiving night, sipping an ultra attractively balanced wine. Now I have regained faith with Paul Pillot’s winemaking skill, it seemed that he can really make magic with any burgundy plot.
