I have previously reported Paul Pillot is my go to Chassagne Montrachet wine, at least for the 1er Cru level, his La Romanee 1er Cru is a killer, one of the best amongst all Chassagne Montrachet producers. However, I also believe a good producer should be all rounded and not just focusing on top end products. Like Krug’s philosophy, they put in their best effort into their NV champagne (I once had a vintaged, Ambonnay and Clos de Mesnil comparison, the vintage came up top). Thus, to pitch against a big boy like Paul Pillot, Philippe Colin gained my respect for this show down. A sip and Paul Pillot’s Bourgogne was completely outclassed by Philippe Colin, not just a single aspect but in every aspect. The most obvious factor was the oak presence in Philippe Colin’s Bourgogne which was lacking or completely absent (I do not have the tech sheet for Paul Pillot’s wine). Philippe Colin’s fruits were more robust and flamboyant, while Paul Pillot’s totally lacked taste and excitement. In fact, towards the last few glasses, I poured away the Paul Pillot Bourgogne more than I drink it.
