If there’s a Chablis village wine that I highly recommend, I will no doubt point you to Jean Dauvissat’s Chablis Heritage series. Tonight I had both the Chablis and Chablis Heritage side-by-side for comparison, it’s a great challenge. Heritage has a very soft and elegant aroma, like a warmly baked lemon juice. Content is also of very good quality, I noted the warmness and softness of the wine, which is very different from most Chablis. Technically, the vines that produced these grapes were 60 to 70 years of age, perhaps these vines are the game changer. Meanwhile, the Chablis version pales in both aroma and tastes. Aroma of minerals and stainless steel, while the content was much harder and stiffer with loads of minerality. It really paled when tasted next to Heritage. I strongly recommend you to try both bottles side-by-side, as I would classify Heritage as a Premier Cru level rather than a village level wine.

Fourchaume, being one of the most famous premier cru in Chablis, definitely has a huge number of followers. If Jean Dauvissat’s Montmains is king, Fourchaume will be the undisputed queen in terms of characteristics.
Aroma of soft and elegance strike within the first whiff, along with very mellow and easy-going bouquet. Palate is obviously a big leap forward compared to all the village classification, and rightfully belonged to the premier cru category.
A sip and the viscosity are undisputedly much better than a village wine, with great acidity balance, as well as softness and elegance coupled with power. With only 2047 bottles produced for vintage 2021, our allocation for this queen was rather pathetic, thus we treasure every single bottle of this gem we possess.

First time I had Chablis from this plot, was told that Montmains also covered some better known plots like Butteaux and Forets, so it has to be a respectable 1er Cru plot. Bouquet started with ocean breeze, but morphed into forest freshness. A sip and my eyes lit up, there was this piercing acidity that’s so lively and enjoyable, absolutely stunning start!
As I slowly drink the remaining glass, I realize it has this Yin (acidity) and Yang (butter) character, the palate has this smooth buttery taste as well as great minerality, it’s really enjoyable to have the best of both combinations. I talked to the winemaker thereafter, he told me they pushed maturation to 24 months, and they will do the same for all other 1er Cru wines they produce starting 2019.

Montmains vines were planted about 70 years ago, thus it can produce very stunning quality wines as the root of the vines dig very deep into the ground. Montmains is always very powerful and fruity, coupled with very modern style, its easy to be mistaken as a new world wine if served blind. This vintage was not different from past vintages, though the fruit intensity was not as powerful as the past vintages.
