I normally age my champagne in my own cellar for a couple of years, reason being I love to have an aged taste. This one was aged for at least 8 years, however, didn't create any Big Bang effect when I popped it today. Just slightly yeasty and still possessed the forest freshness on the nose. Palate wise slightly yeasty, a bit diluted and lacked fruits, a bit disappointing. Although the bubble was still alive and kicking, decent but not a stunning label to die for.
