Gonzalez Byass sherries are crafted in their historic bodega in Jerez, Spain, where the region’s unique chalky soils retain moisture, allowing vines to flourish despite the long, hot summers. The must for Alfonso Oloroso Seco is drawn from the second press, enhancing its structure and body. After fermentation, it is fortified to 18% alcohol before entering the Alfonso Solera, where it matures in American oak casks for an average of eight years, following the traditional Solera system.
Golden amber in hue, this Oloroso showcases intense nutty aromas of hazelnuts and walnuts, layered with oak and spiced notes reminiscent of truffle and leather. The palate is complex and richly flavoured, with a lingering finish that offers subtle hints of vanilla and a surprising touch of sweetness. Pair it with hearty meat stews, cured meats, pâtés, or mild cheeses for a perfect match.
Sherry has been at the heart of the Gonzalez family for five generations, ever since Manuel Maria Gonzalez founded the house in 1835. Their historic bodega is a treasure trove of barrels, from vibrant young Finos crafted for lively tapas gatherings to exceptional Rare Old Soleras and majestic vintage Olorosos and Palo Cortados.
