2020 Jean Dauvissat Chablis Premier Cru Cote De Lechet
Cote de Lechet is a sun-drenched terrior, thus the ripe grapes produce a wine with fruity intensity, accompanied by fine minerality. Jean Dauvissat’s Cote de Lechet is no exception, its plot has full sun exposure, thus the end result is a very rich wine. Annual production is usually around 4,500 bottles, but for 2020 vintage due to frost, production is slashed by half. Bouquet of full minerality, accompanied by subtle blend of lemon and lime flowers. Content reflects a muscular, powerful fruity wine, with loads of minerality. It went perfectly well with my home-made Manila clam soaked in thickened cream with garlic and shallots.
